SPECIALITY OF THE CAFÉ
Well for Fathers Day here's a dish that all dads out there will love!
Southern fried chicken with potato salad and corn on the cob.
For four people simply cut your chicken up into even sized pieces and place in a large pot, bring to the boil and simmer for around 45 minutes, leave to cool and keep the stock for soup or a sauce at a later date. When cooled, roll the chicken pieces in seasoned flour with some Cajun spices or chilli powder then into egg wash and roll into fresh bread crumbs. Place chicken into deep fat fryer for 2-3 minutes then finish in the oven until
heated through. While the chicken is cooking, peel and boil some potatoes, add
parsley and mayonnaise, serve with your buttered corn on the cob and southern fried chicken with an ice cool glass of beer...... an absolute delight for any discerning Dad.
